Caramel chocolate chip apples

Just another fabulous fall day in North Carolina and nothing gets me into the mood to cook like open windows and cool fresh air.

I love caramel apples in the fall and so do my kids. They are so simple to make. Just pick up about 5 large apples from your supermarket or better yet, from your local farmers market, some craft sticks from your local craft store, and a bag of individually wrapped caramel candies. Unwrap all of the caramels and put them in a small pot with 2 tablespoons of water on medium heat. Once the caramel melts, and after you put the wooden sticks into your apple where the core is, dip the apples in the caramel and use a spoon to drip more onto the top. I rolled my apples in chocolate chips, but you could also roll them in crushed nuts, marshmallows, crushed pretzels or other candy. mmmm, yum.
