Surprise Vegetable

Can you name this vegetable? Neither could I.  I literally had to look it up.  My son comes home with a bag full of produce each week from a local CSA.  Sometimes what's in the bag is a mystery to us.  


Guess what? They were beets!  Holy smokes I've never seen what a beet looks like for real.  I've only seen the canned versions of them and never really like them.  But they were super easy to make and tasted yummy. I washed them and wrapped them in tin foil. Placed them on a center rack in the oven and baked them at 375 for 1.5 hours.  Once they cooled, I peeled them with a potato peeler and sliced them. I served them with a little salt. You can also add pepper or cumin for more flavor.


My daughter LOVED them, but this picture is just hysterical. Bib required. 


Now go try some beets. I think they are pretty good for you!

Cool. We did grow some beets in the garden long ago but I ended up eating them all myself ! Never knew you could bake them!!!

They are definitely an acquired taste. Hopefully my kids will all learn to love them. How did you cook them?
